Preheat oven to 250°F. Set aside a small baking pan (I make mine in a toaster oven).
Combine chex, pretzels, chickpeas, and peanuts in a large bowl.
Make sauce by mixing melted butter, maple syrup, soy sauce, and sesame oil in a small bowl.
Pour sauce over chex mixture and mix until well coated.
Stir in aonori and nutritional yeast and mix until well coated.
Stir in nori if using.
Spread out in baking pan.
Bake for 60-70 minutes, stirring every 15 minutes, until mixture is dry and lightly toasted.
Cool in the baking pan for at least 10 minutes to crisp up further.
Notes
1) I make my own roasted chickpeas and lightly season them with garlic powder, onion powder, nutritional yeast, smoked paprika, salt, pepper, and olive oil. Air fry at 375°F for about 15 minutes, or bake in the oven at 400°F for 25-30 minutes. Since they will be baked again in the chex mix, they can just be lightly roasted the first time. If you don't have roasted chickpeas, you can replace with more roasted nuts, cereal, popcorn, or pretzels.
