  • Apples Choose firm apples that hold their shape well during baking, such as Pink Lady, Honeycrisp, and Braeburn apples. Granny Smith apples are also good for baking, but are more tart than sweet, so you may want to add more sugar if using Granny Smith apples.
  • Berries Any berries, fresh or frozen, will work. Frozen berries don’t need to be thawed.
  • Oats It’s not a crisp without oats! Rolled oats and oat flour are used in the topping, as well as a bit of oat flour in the filling to help thicken.
  • Walnut Butter + Vegan Butter I like to replace some of the butter with walnut butter for extra nutrients and flavor. Walnut butter adds a richness and nuttiness that vegan butter just doesn’t have.
    • Substitute: Another nut butter like pecan butter or almond butter would be delicious! For a nut-free option, try sunflower seed butter or tahini, or you can replace with more vegan butter. If you don’t have access to vegan butter, you can replace the vegan butter with coconut oil (use refined for neutral flavor) or a liquid oil like vegetable oil – but this will make the topping softer.
  • Sugar/Brown Sugar ⟶ I like brown sugar in the topping for a more caramel-like flavor, and granulated sugar in the filling to enhance the fruit flavors. But feel free to use what you have – coconut sugar should also work. I don’t recommend a liquid sweetener as this may make the topping too soft.

This mixed berry apple crisp is delicious as-is, warm or cold! For more decadence, add a scoop of dairy-free vanilla ice cream or whipped cream. For better blood sugar balance, serve it with some high protein yogurt – then you can eat it for breakfast, too 😉

Storage & Meal Prep

Store mixed berry apple crisp covered or in an airtight container in the fridge for up to 5 days. The crisp topping will soften and get more soggy over time, but you can pop it in the oven or air fryer at 350°F for a few minutes to restore some of the crispness.

If you want to prep the crisp ahead of time, you can do so the night before, but keep these tips in mind: Store the topping and filling separate until ready to bake. Use fresh fruit or add the frozen fruit just before baking, otherwise it will release too much liquid as it sits in the fridge.

Many apple crisps can be high in added sugar and saturated fat, but this version is made healthier (but still just as tasty!) with a lot less sugar, oats instead of flour, and walnut butter to replace some of the vegan butter. One serving has 8 grams of fiber! That being said, it should still be treated like a dessert and not over-consumed. To make it a more satiating snack/dessert, serve with some high protein yogurt or a sprinkle of of nuts/seeds.

While they’re all a type of baked fruit dessert, they differ in their toppings. A crisp includes a streusel with oats and sometimes nuts to create a crispier topping when baked. A crumble is similar but made without oats and usually just a flour-butter streusel, so the topping is more tender. A cobbler is made with a biscuit-like topping.

Ingredients

Topping

  • 39 grams (3 tbsp) vegan butter melted
  • 45 grams (3 tbsp) walnut butter
  • 75 grams (½ cup + 2 tbsp) gluten-free oat flour
  • 60 grams (¾ cup) gluten-free rolled oats
  • 45 grams (¼ cup) brown sugar
  • ¾ tsp cinnamon

Filling

  • 600 grams apples cut into ½-inch thick pieces
  • 600 grams mixed berries fresh or frozen (don't thaw if frozen)
  • tsp lemon juice
  • 30 grams (2½ tbsp) sugar
  • 22 grams (3 tbsp) gluten-free oat flour
  • ¾ tsp cinnamon

Instructions

  • Preheat oven to 350°F/180°C.
  • Make the topping: Mix melted butter and walnut butter together in a small bowl until well combined.
  • In a separate bowl, stir together oat flour, rolled oats, brown sugar, and cinnamon. Add the butter mixture and stir until clumpy and no longer dry. Place in the fridge to chill.
  • Make the filling: In a large bowl (or your baking dish), combine apples, berries, lemon juice, sugar, oat flour, and cinnamon. Mix until everything is well combined. Transfer to an 8×8-inch (or similar size) baking dish.
  • Sprinkle the topping all over.
  • Bake for 45-60 minutes until the filling is bubbling and the top is golden.
  • Cool for at least 15 minutes before serving. The filling will thicken more as it cools.
  • Store leftovers covered in the fridge for up to 4 days.
